I grew up in Tennessee where deviled eggs were a staple at every pot luck or holiday table! More than likely there were a few varieties of deviled eggs at any given time, especially during Easter time! I love taking classic recipes that I grew up on and giving them new life with exciting new ingredients! Deviled eggs have endless possibilities as far as ways you can add different flavors to them and I created a deviled egg that is perfect for Easter brunch or to serve as an appetizer to Easter dinner! My chorizo deviled eggs are so delicious and easy to make and I can promise even people who think they don’t like deviled eggs will be raving about this recipe!

A few weeks ago I met up with my fellow team members of #TeamNosh in Colorado for our first ever retreat where we all got to hang out (some of us for the first time in person)! We ate, we worked, we chatted, we collaborated, and we honestly had the most lovely time with each other and left feeling like we had known each other for years! It was such a pleasure being around women who I knew virtually to be really great, but then in person were even better than I had thought! We stayed in a gorgeous airbnb that had a refrigerator the size of my house, which was a good thing because when you get six food bloggers together, there is bound to be a lot of delicious food to be had!
Happy Monday! Over the weekend one of the ways I like to meal prep is by making a big batch of muffins that I can keep in the fridge or freezer for easy breakfasts and lunch box additions all week long! I find that everyone is always happy when freshly baked muffins are available and even better if they are somewhat healthy too! I happened to find myself with some really ripe bananas last week and knew they were meant to become banana muffins! I wanted to take them up a notch by adding some dark chocolate chunks to make them extra special and delicious! My healthier chocolate chunk banana muffins are just the special treat that your weeks needs and the good news is they are super simple to make too!
Bye Bye January and hello February! Anyone else feel the same way? I always feel like January is a slow motion month where I can’t seem to find my rhythm after the holidays. It’s basically there so we can adjust to normal life again and then in February we get to really start our new year. Or maybe I’m alone in this and I need to get my act together sooner next year…either way I am welcoming February with open arms! I am finally over my shingles (yeah I had shingles last week if you missed it) and I feel like I am all about eating things that makes me feel good and that nourish my body as I am healing! I have been loving adding this Spicy Kimchi Avocado Toast into my morning or afternoon because it’s not only delicious, but packed with serious nutrition too!
Yesterday was one of those days in motherhood where you question your sanity. Maybe you find yourself hiding in a closet for ten minutes so you can have a moment to breathe alone, or maybe you raised your voice and have a bit of mom guilt because of it. Maybe you aren’t a mom, but you had one of those days too where you just couldn’t wait for bedtime so you could wake up to a fresh new day. Either way, I feel you. Whenever I have a day like this, baking is something that brings me happiness in the midst of whatever chaos is going on. There is something so therapeutic about measuring and whisking and then smelling warm sweet goodness enveloping your home like a great big hug. I find that when I involve my son in the baking it instantly changes his mood too, it’s the ultimate distraction with the end result being so delicious. (Win-Win) My whole wheat zucchini tahini bread is our new favorite treat to make whether or not we are having a rough day and you are going to love it too!

Between Parks still waking up in his big boy bed during the night, the hubby working late a few nights this week, and my own work, I have been counting the days until the weekend and a lazy Saturday morning! To me there is nothing better than a weekend morning where you don’t have to rush out the door and can make a special breakfast that can be enjoyed by the whole family! My chocolate chip pancakes with a blood orange chia syrup are going to make your weekend just a little bit sweeter!
