This weekend just flew right on by for me. I mean I guess it always does, but this weekend in particular was extra fast despite the dreary weather that has become normal around here. (Which, PS is totally not like normal Texas weather!) I also can't believe that it is almost Valentine's Day already this week! We aren't too big on celebrating Valentine's Day, and usually just stay in and cook dinner at home! I do like to make a few treats around this time of year and if I can make them healthy in the midst of all of the sugar options that are bring thrown in our face, then even better! Anyone else feel like January has been the longest month ever? I can't even pin point what has made it so long, but it just seems like it should be over already! I am 100% ready for a new month and since it has taken me until the end of January to really get back into my healthy routine I guess you could say February is going to be my official start to the new year! I love having healthy food items like granola prepped and ready to go in my pantry because it makes for such a yummy breakfast or snack! My coconut and apricot granola is such a great combination of flavors and textures and is packed full of good stuff for your body to keep you fueled all day!

Monday comes at me hard every week no matter how prepared I think I am for it on Sundays! I am always a little slow to get going on Monday, but once I adjust I do love the idea of a fresh start to any week. No matter what you ate over the weekend, or how unorganized you were the week before, Monday is a new day and a new chance to do it better! I love hitting the restart button on Mondays and that usually means I am craving my easy and delicious everyday green smoothie!
Let me start this off by saying that yesterday it was 65 degrees and sunny...felt completely like a Spring day...today it's supposed to snow and I'm totally confused by it all! This Texas winter has been the craziest yet! But anyhow, I hope we actually see some snow today because Parks will love it and I will love an excuse to make some hot cocoa and cozy up in my PJ's and not leave the house! The thing with snowy weather is that I always want comfort food, which usually comes in some form of a carb. However, I have really been trying to stay conscious of eating a little bit lighter on the carbs during the week so any kind of recipe that gives me that comfort satisfaction while keeping me on track is a winner in my book! My mini pizza frittatas are just the thing to satisfy my carby comfort food cravings without any guilt!
Happy Friday friends! I am so excited for the weekend and the fact that it is going to be cold again for a few days! Houston never gets this much cold weather in the winter so I am loving being able to make all the cozy food and wear all of my sweaters that have been in boxes since we moved here! When the weather shifts there few things I love more than baking in the kitchen. There is something about a warm and delicious treat right out of the oven that is so comforting and perfect on a chilly day! I honestly cannot believe that we are a week away from Christmas already! This year went by so quickly guys, I literally cannot get over it. We are heading to my parents house this week and I am so ready for a little vacation and downtime with my family! My mom is one of those people who just makes Christmas so magical, which is why it has always been my favorite holiday. So many memories of family traditions including delicious meals are still so strong in my mind! I hope that I can make Christmas just as magical for Parks year after year so that he grows up with the same love for the holidays!
