I am not sure when Taco Tuesday became a thing, but I am totally on board. For one I love tacos (duh), but secondly I love that every week I can use this day as an excuse to make some sort of taco and I don’t have to think about what’s for dinner! The only thing I have to decide is do I want steak tacos, fish tacos, taco salads, or chicken tacos! Not a bad problem to have right? I have been meaning to share my chicken taco recipe and and am finally getting around to it! This recipe is not only full of flavor, but it can be ready in 30 minutes any night of the week! I have created the BEST chicken tacos and you are going to love adding this recipe into your taco rotation!

It’s time for our second Supper Club y’all! I am so excited to cook and hang out with you guys for the second Supper Club this year! I love Supper Club because it’s a place where we can come together as women and cook, chat, and support each other all while being miles apart! That’s the beauty of a virtual Supper Club and I love that anyone can be involved! I partnered up with Village Farms again to bring you the best Summer recipes for grilling and entertaining all summer long! My Spicy Asian Cucumber Noodle Salad and my Grilled Cioppino Foil Packets are two fresh and delicious recipes that are perfect for patio hanging with your friends and family!
I’ve been thinking of doing a series on grilling this summer because it seems to be a cooking method that a lot of people are intimidated by, when actually it’s quite simple! It just so happens to be one of my favorite ways to prepare food! I love that I can literally throw anything onto the grill and make my whole meal without even turning my oven on, especially when I don’t want to heat up my house in the hotter months! It truly makes easy weeknight cooking that much easier! My grilled lemon, shrimp, and asparagus orzo salad is one of those easy meals that can be prepared on the grill and is perfect for any night of the week or for a weekend BBQ!
I made this Easy Panko Crusted Cod Fish last week on Instagram and I had an overwhelming response of people wanting the recipe for it! I can see why because not only is it delicious, but it could not be any easier to make (fifteen minutes easy to make). It was one of those recipes that I made by accident a few months back that turned into one of my favorite fish recipes! It’s my go-to weeknight meal lately and even my three year old gobbles his fish right up! It can be easily served with your favorite vegetable of choice to make a super simple and healthy meal that can be made on even the most exhausting of days! This easy panko crusted baked cod fish is going to be your new favorite way to serve fish up to your family!
I’ve always been a fajita girl when it comes to ordering out at a Mexican restaurant, while my hubby for a long time was more of an enchilada kind of guy. (I converted him to love fajitas so we could share…wink wink.) I love enchiladas too don’t get me wrong, but I tend not to order them out because I feel like they are one of the less healthy options for me to get, and you already know I am not sacrificing the chips and salsa or the margarita! You get what I’m saying here? To compromise, one of the things I like to do with dishes that I love is to recreate some of my favorite restaurant style dishes, that may not be as healthy, at home so that I can have control of the ingredients while still satisfying that craving! My Chipotle Chicken Skillet Enchiladas are just the kind of dish that you would order out at a restaurant, but can be made right in your own kitchen!
Chicken is one of those staples that I always have in my freezer to cook up on any night of the week. The problem is, I get into the habit of making the same dishes over and over and am always looking for some new ways to cook chicken that my family will love! Can you relate? I figured as much, which is why I decided to pull together all of my favorite chicken recipes into one post for you to reference any night of the week when you get into a chicken rut! My top 15 chicken recipes will give you the variety you have been looking for to keep everyone happy at the dinner table!
