Just like that it's Monday again guys! How was your weekend? My sister-in-law was in town and so Canean and I got a little "us" time on Saturday and ended up eating out for lunch and dinner and managed to squeeze a nap in between the two! It was heavenly! Yesterday we had a pretty low key Sunday and it seems like the day just disappeared like it always does meaning that the weekend came to a close too fast. I have always been one to stay up late on Sundays because I don't want Monday to come, which is silly really because it's not like Mondays are all that bad ya know. I mean sometimes they are, but really I think we make them worse in our head then they really are. Anyhoo, I have an easy egg free mint chocolate chip ice cream that is just perfect for curing those Monday blues and you are going to love me forever for it!
Hellooooo summer! Although in Texas it feels like it's been here for a month or two now, it actually just arrived yesterday and I for one think it gives us all permission to drink more cocktails and eat more ice cream. Who's with me? I am all about some ice cream guys, whether it's hot outside or not...but you probably know this by now. However, I have really been trying to make an effort to ditch the sugar and cure my sweet tooth in other ways. I know that you have seen nice cream making it's mark in history by creating a smooth and creamy ice cream base out of frozen BANANAS, which is actually kinda bananas in itself, but also pretty genius. Nevertheless, it is delicious and a great way to satisfy that ice cream craving that comes full circle with the mention of summertime! My strawberry rhubarb cheesecake "nice" cream is going to rock your tastebuds in all the right ways with absolutely zero guilt and you are going to want to make this at every BBQ for the rest of the summer!
Hallelujah it's Friday! This week has been dragging on and I have been waiting for today since Monday it feels like! I was out of town last weekend, so I am beyond excited to spend thia weekend with my guys. We have a pumpkin party that we are going to where there is a pumpkin recipe contest. I am pretty pumped about getting to make my famous pumpkin bars, as well as a new pumpkin dip that I am testing out too! Other than that, we have a whole lot of chilling on the agenda. I am about to get super busy with a new project that I can't wait to share with you so this will be my last weekend for a while not working. I plan on making pumpkiny things, a big batch of soup, and these super easy chocolate mousse cups and you should too!
Yesterday the weather didn't get above ninety degrees which means it's officially feeling like fall here in Texas. Fall for us is pretty hot still, but I'm telling you below ninety feels amazing right about now. Since the weather is still a little warm, and I'm a firm believer that ice cream and popsicles should be consumed year round, I made you the perfect fall popsicle that can be enjoyed in forty degrees or a hundred. To top off the cooler weather this week, I also received the most gorgeous package in the mail from JORD Wood Watches. I have always had a thing for wooden accessories and when JORD reached out about partnering, I jumped at the chance! Cooking and keeping a watch on the time go hand in hand and it sure doesn't hurt that this watch happens to be gorgeous in every way!
I have let y'all down this summer. I usually have at least a couple ice cream and popsicle recipes for you to make during this time of year and well, I have just been off my game. Not sure if that is a good enough excuse, but I am hoping to make it up to you by gifting you with a really really delicious homemade ice cream recipe! My roasted fig scracciatella ice cream is everything I love about an ice cream and I think you will love it too.
School has started back for most, and while that should signal fall is around the corner, the weather is telling us something completely different. It's hot outside, smoldering actually, and a cool treat should be mandatory for kids and adults alike since the heat has decided it wants to stick around!
