Gluten Free Spiced Vanilla Pear Bread

I have officially been bitten by the fall baking bug! Even though the weather here in Texas isn’t cooperating, I am carrying on with all of the fall recipes! Pears are one of those fall fruits that I feel like people forget about and honestly they are one of my favorites at this time of year! I obviously love them as a healthy snack all by themselves, but they are also fantastic to use in savory dishes and baked goods alike! My gluten free spiced vanilla pear bread is one of those fall recipes that you are going to want to make all season long!

I recently found myself with quite a few pears that were pretty ripe and I knew we wouldn’t eat them all before they went bad so I decided to make a bread out of them! And man am I glad i did! This bread is gluten free, but is super moist and delicious thanks to the pears! There isn’t anything quite like the smell of fresh baked bread of any kind wafting throughout the house if you ask me, especially if you are lucky enough to have a crisp morning with windows open while you are baking it! Those kind of days are my favorite kind of fall days!

This bread has warm notes of vanilla, cinnamon, ginger, and cloves running throughout and is delicious with a cup of coffee in the morning or my favorite is to enjoy it in the afternoon slathered with a little nut butter for the perfect little pick me up! You can imagine how amazing your house will smell while you are baking this one right?

SO GOOD! And with the upcoming holiday season approaching this bread would also be so beautiful as part of your menu, perfect to add to a holiday brunch or for a little after dinner treat!

Even if you don’t follow a gluten free diet, you are still going to love this bread so much I promise! It really is special and your kids are going to love it too! I am pretty pumped for you guys to try this one out!

Ingredients:

  • 1/2 Cup Coconut Flour

  • 1 Tsp. Baking Powder

  • 1/2 Tsp. Baking Soda

  • 1/2 Tsp. Salt

  • 1/4 Cup Olive Oil

  • 1/4 Cup Almond Butter (or any nut butter)

  • 2 Eggs

  • 4 Pureed Ripe Pears (skin on if they are organic, about 1 1/4 cups)

  • 1/2 Cup Coconut Sugar plus extra for sprinkling

  • 1 Tbsp. Cinnamon

  • 1/8 Tsp. Cloves

  • 1/2 Tsp. Ground Ginger

  • 1 Tsp. Vanilla Extract 

Directions:

  • Preheat oven to 350 degrees.

  • Line a bread pan with parchment paper to prevent sticking.

  • In a large bowl combine olive oil, almond butter, eggs, pureed pears, coconut sugar, and vanilla and whisk until combined and smooth in texture. (Can do this by hand or with an electric or stand mixer.)

  • In another bowl combine coconut flour, baking powder, baking soda, cinnamon, cloves, ginger, and salt and whisk to combine.

  • Slowly incorporate the wet ingredients into the dry ingredients until well combined.

  • Pour batter into the parchment lined bread pan and bake for 45-55 minutes until center is firm and a toothpick comes out clean.

*Note thinly slice a few extra pear slices to place on top of the bread before baking to make it extra fancy! This is completely optional though!
